Origin: Villa Rubiela Farm, Pitalito Huila, Colombia

Cultivar: Pink Bourbon

Process: Honey

Roast Level: Light

Taste profile: Plum, apple, maple syrup

This Pink Bourbon hails from the farm of Fernando Vargas, a third-generation coffee producer who learned the craft alongside his grandparents. In 2011, Fernando purchased his land when it was mostly pasture, with just a handful of Caturra trees. From that modest start, he devoted himself to coffee cultivation—planting new varieties and refining his techniques. By 2017, he introduced Pink Bourbon, and today, it flourishes on roughly a third of the farm, complementing other cherished varieties like Colombia Yellow and Caturra.

Fernando’s background, including time spent in the Federation of Coffee Growers’ extension service, provided a deep understanding of farming methods and flavor development. This particular Pink Bourbon, processed using the honey method, represents the evolution of his work and the rich farming heritage passed down through generations. The result is a coffee that embodies both the region’s natural bounty and the careful, attentive hands that bring it to life.
