We’re excited to introduce Hypergoat’s first-ever Gesha, released as a limited edition for the Holidays.
This Gesha comes from La Villa, a family farm in San José de Isnos run by Juan Darío Gómez, who has been refining his processing methods since 2017. Grown at 1,720m, the six-year-old Gesha trees offer a cup that is bright, floral, and layered with fruit sweetness.
The cherries are hand-picked and undergo an anaerobic washed process, beginning with 24 hours of fermentation in cherry followed by 24 hours submerged in mucilage juice. After demucilaging, the coffee dries for about 15 days on raised beds, allowing slow, even drying that preserves clarity and aromatics.
