Crafted through the ethyl acetate (EA) process using a naturally occurring compound derived from fermented sugarcane, this coffee undergoes a meticulous method that gently removes caffeine while protecting the integrity of the beans. First, the green coffee is steamed to open its pores. It’s then soaked in a water and ethyl acetate solution, where the caffeine bonds with chlorogenic acid salts and is gradually removed. After the caffeine is eliminated, the coffee is steamed once more to ensure no trace of E.A. remains.
The result? A sweet and satisfying cup that offers notes of praline and fruit with a pleasing balance of acidity and sweetness.
