This light roast Caturra is the result of meticulous care and a commitment to traditional methods. Dagoberto selects only the ripest cherries, initiating a delicate fermentation process that begins overnight to develop the coffee’s natural sweetness. The washed process he employs, revered worldwide for its clarity and purity, is executed with precision. Every step, from floating the cherries to remove less dense beans, to de-pulping and fermenting for 30 hours, reflects Dagoberto’s unwavering attention to detail.
During drying, Dagoberto sifts the coffee every three hours, ensuring that each batch reaches the perfect consistency, a testament to his dedication to quality. Dagoberto, a second-generation coffee farmer, has dedicated his life to his craft. His coffee
crop, composed of 7,000 Caturra trees, is located on the Pechené family farm on a plot of land
his father gave him a little over a decade ago. In between harvests, Dagoberto nurtures the trees
to deliver both yield and quality during the main harvest. "Having a crop of poor-quality coffee
doesn't make sense, especially if a farmer is paid more for the coffee," says Dagoberto. He often
recalls the stories his father used to tell him about the importance of quality in coffee farming,
and these stories continue to inspire him in his work today.
"I am deeply passionate about coffee, especially during harvest time," Dagoberto shares. His
love for managing pickers and his constant drive to enhance the quality of his coffee are evident.
While he currently operates on his childhood home farm, he aspires to one day have his own
house and farm. His passion for coffee is palpable in the unique and fruit-forward cup he
produces. He employs a washed process, a method that has made Colombian coffee renowned
worldwide. In this process, he meticulously selects the ripest cherries and leaves them in bags
overnight to develop sweetness. This is the first step in fermentation, which continues after the
cherries are floated to remove less dense, lower-quality beans. Dagoberto then de-pulps the
coffee cherries and ferments the mucilage in fermentation tanks for 30 hours.
After the fermentation process, Dagoberto meticulously sifts through the coffee every three
hours to ensure even drying. He understands that a steady and careful drying process is crucial
for stabilizing the coffee and ensuring consistency in the cup. His unwavering commitment to
quality is further demonstrated by his plans to improve his drying bed or establish a new one,
with the aim of increasing the volume of coffee he can produce without compromising on
quality.
